Burrito Night!

If you can't tell by now, I love food.  I might be picky in my tastes but generally me and food get along pretty well.  That's also the case for my siblings.  My brother invited me over for dinner on Sunday and I couldn't be happier.  I really wasn't in the mood to cook and he's always holding it down.  I was hoping for some magical jollof, but instead he featured chicken burritos.  




I'm not sure how he made everything but I was around for the final product and it was AWESOME. Some of the parts that made up the whole include: 
Onions and peppers




Delicious non-greasy chicken (trust it's an accomplishment for him!)



His roomie made some guacamole that was creamy and delicious. Also a lot better than the one I tried to make the day before. So bad I couldn't even blog about it (ouch!)


My bro wraps burritos like he has worked at chipotle. Witness the magic...it's like being in chipotle - BUT BETTER!


Loved it. The chicken was delicious, the vegetables beans and rice all belonged and the chipotle mayo brought everything together quite well. Perhaps he'll share his recipes! Yup no better way to ward off the sunday night blues than a good meal and some good tv. Next Sunday promises to be equally exciting! Stay tuned...

Yellow Rice & Peas with Garlic Shrimp

The cake situation had me a little distressed and I was definitely feeling uninspired for dinner on Saturday.  It would have been nice to go out for dinner but with the cold weather settling in I might as well get used to cooking again.  Shrimp is usually my go to when all else fails so I made yellow rice with peas, garlic shrimp and plantain.


It was pretty simple and I’m almost ashamed to even put up the recipe, but based on the comments and e-mails I’ve received I know it’s the simplest recipes that are appreciated the most. 
 
1lb large shrimp, peeled and deveined
2 garlic cloves
1/4 cup sliced onions
2 tsp chili powder
1 tsp paprika
salt and pepper to taste
2 tbs olive oil
 
In small bowl, season shrimp with chili powder, paprika, salt and pepper.
 

Stir together and let sit in fridge for 10 minutes.  In medium saucepan, heat olive oil on medium heat.  Add garlic cloves and sliced onions.  Stir until onions are tender, but not brown.  


Add shrimp.  Let the shrimp cook for 2 - 3 minutes on each side.  Stir so onions and garlic are mixed in with shrimp.  See how easy that was?

 
I made yellow rice and added 1 cup green peas and of course fried some plantain as well.  In the end a pretty good meal that helped me forget about the brownie cake - until I decided to have a slice for dessert.

Chocolate Cake with Buttercream Frosting

After brunch on Saturday, Mr. W and I returned to my place. We had a lot of catching up to do but rather than sitting on the couch and chatting it up, I decided to bake a chocolate cake with buttercream frosting. What a mistake. I don't know if it was the distraction of talking while baking or cooking on a full stomach but something went wrong.


The final product looked fine and tasted okay but it was very much brownie like and even now I'm not sure where I went wrong. I reluctantly share this recipe. I'm only doing it in case you want a brownie like cake or you come across it and aren't sure what it's gonna look or taste like. Unfortunately, I can no longer find the source of this recipe otherwise I'd definitely go back and ask questions. I'll try another chocolate cake recipe soon but here's what I did.

Ingredients
1/2 cup whole milk
1 tbs white vinegar
4 ounces semisweet chocolate
1 stick unsalted butter, cut in pieces
1 cup water
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups sugar
2 large eggs
1 teaspoon vanilla

Butter and flour 2 round cake pans. I used 9 inch pans.  Stir together milk and vinegar in mixing cup and let curdle.  Melt chocolate, butter and water in a large bowl set over a saucepan of simmering water whisking until smooth. DING DING DING - AS I'M TYPING THIS I REALIZE I DIDN'T ADD THE WATER!! - ugh definitely a case of baking while distracted!


Remove chocolate from heat and cool slightly.  Beat sugar into chocolate mixture with an electric mixer. Add eggs 1 at a time and beat well after each addition then beat in vanilla.  Sift flour, baking soda and salt together.  Add flour mixture to chocolate and beat on low speed until combined.  Add milk and beat on high speed for a couple of minutes.


Dived batter evenly between cake pans.  Bake for about 30 - 35 minutes until tops of cake spring back when touched lightly.  Cool cake on racks for 5 minutes then invert onto rack to cool completely.

While I shook my head puzzled about why my cake didn't rise as much as it usually does, I started working on the frosting.

Ingredients
3 cups confectioners' sugar
2 sticks butter, cut into pieces
1 tsp vanilla extract
2 tbs whipping cream

With a hand mixer, mix together sugar and butter.  Mix on low until well blended then increase to medium and mix for a 2 more minutes.  Add vanilla and cream then beat for another 3 minutes until mixture is light enough to be spreadable.


Woweee thats some sweet frosting. Not sure why I was so shocked at the sweetness I mean look at what I put in there?! To frost the cake, but one layer top down and frost then add the other layer bottom down.  Frost the top and around the sides.  Apply frosting liberally.  I added chocolate chips on top because the cake looked so boring.  They happened to fall into a perfect T ;-)


Like I said, it's not that the cake tasted bad, it just didn't taste like the cakes I normally make, it tasted much more like a brownie. Hopefully, Mr. W will vouch for the taste (he had a huge piece for breakfast on Sunday!) Now that I figured out what my mistake was, I may try this recipe again - but the next cake I make will probably be that awesome red velvet cake that I've yet to mess up.

Il Caffe Latte

Although I was up really late last night I ate dinner so early that I woke up famished. Unfortunately, Mr. W wasn't scheduled to arrive until around 1. I found a small snack and managed to not stuff myself while waiting for him. Of course he took the wrong train but finally he made it!  We headed straight to Il Caffe Latte because it's right in the neighborhood and I haven't been there in a really long time.

Caffe Latte is a cute little spot that is one of many places helping to revive Lenox Avenue. Their menu has lots of options and you're bound to find something to satisfy your mood. I definitely wanted breakfast and Mr. W had moved on to lunch. I was really excited to make my own omelette. I added spinach, onions and turkey sausage.


The omelette was served with a side salad. The spinach and sausage, when eaten alone, were nothing short of amazing. Unfortunately, they were in the mix with huge slices of onions that were rather distracting and the egg was slightly burnt on one side. Drats! I was really looking forward to giving this place a great review. The salad was really good so whatever dressing they threw on those leaves was awesome. I really wanted to order a pastry to accompany my eggs but I'm glad I didn't. Mr. W ordered a cheeseburger with sweet potato fries.


Those fries were just what I needed to complete my meal. Although I didn't taste it I knew the burger was good because Mr. W didn't leave a single crumb on the plate.

The service at Caffe Latte was a little spotty. Our server was distracted or disinterested (hard to tell the difference).  The food was good but not great. Yet I know I will return. Not just because its in the neighborhood but because of the warm feel of the place (they have wi-fi and power outlets), the fries, and the knowledge that one good but not great omelette does not make or break a restaurant.
