Yellow Rice & Peas with Garlic Shrimp

The cake situation had me a little distressed and I was definitely feeling uninspired for dinner on Saturday.  It would have been nice to go out for dinner but with the cold weather settling in I might as well get used to cooking again.  Shrimp is usually my go to when all else fails so I made yellow rice with peas, garlic shrimp and plantain.


It was pretty simple and I’m almost ashamed to even put up the recipe, but based on the comments and e-mails I’ve received I know it’s the simplest recipes that are appreciated the most. 
 
1lb large shrimp, peeled and deveined
2 garlic cloves
1/4 cup sliced onions
2 tsp chili powder
1 tsp paprika
salt and pepper to taste
2 tbs olive oil
 
In small bowl, season shrimp with chili powder, paprika, salt and pepper.
 

Stir together and let sit in fridge for 10 minutes.  In medium saucepan, heat olive oil on medium heat.  Add garlic cloves and sliced onions.  Stir until onions are tender, but not brown.  


Add shrimp.  Let the shrimp cook for 2 - 3 minutes on each side.  Stir so onions and garlic are mixed in with shrimp.  See how easy that was?

 
I made yellow rice and added 1 cup green peas and of course fried some plantain as well.  In the end a pretty good meal that helped me forget about the brownie cake - until I decided to have a slice for dessert.
