Whole Roasted Lemon Chicken with Roasted Red Potatoes

This was originally going to be the only main dish during the dinner party, so I really wanted it to be delicious.

1 whole chicken (3-4 lbs.)
1 lemon
3 garlic cloves, 2 minced and 1 whole
2 tbs olive oil
6 red potatoes, cut
salt and pepper to taste

Clean the chicken and remove the giblets.  I usually don't rinse chicken before I use it just squeeze some lemon all over it.  Unless if it's really fatty then I remove the fat and give it a quick rinse.  This little chicken was clean.

hehe sorry but I had to share that picture.  Anyway, salt and pepper the chicken and add the garlic.  Squeeze juice from one half of the lemon over the chicken then drizzle 1 tbs of oil over the chicken and rub it over the chicken so the salt, pepper and garlic are worked in.  Then lay the chicken in a pan, breast up.  I stuffed the chicken with the other half of the lemon and 1 garlic clove then I tied the chicken legs together so that way they wouldn't separate while cooking.
 
Next I put the potatoes in a bowl and added salt, pepper and the remaining olive oil.  Mix it all together and empty into the roasting pan all around the chicken.

 
I put the pan in the oven for about an hour and a half basting every 20 minutes or so and making sure the chicken remained moist as did the potatoes.  

Overall it was pretty simple prep for an awesome meal.
