Arroz con pollo

Ha! Amazing how you go from having nothing to do to working like a dog.  I left the office about an hour later than I thought I would when I got there this morning.  When I left, I still had my heart set on making arroz con pollo.  I took out the chicken this morning, had peppers and jalapeños left over from when Mr. K and Ms. S were here and was really looking forward to it.

Sadly when I opened the door, my apartment in complete disarray.  The person who was supposed to fix the wall locked himself out while he was still working.  So when I walked in, my couch, coffee table and dining table were pushed up against the front wall and covered in tarp.  My curtains were hanging on my closet doors, the floor had paint chips, some big machine, a small ladder and the radio was blasting!  I felt overwhelmed.  Plans of making dinner from scratch quickly went out the window.  

So I decided it would be a goya night.  I sauteed the chicken in the pan I planned to cook the rice in, added a few spices and peppers then some water.  Looks good right?

Next step pour the goya yellow rice in there.  Stir, cover and let it simmer for 25 minutes or so.  Of course made some plantain too...I just can't help myself!
I'll try from scratch another less stressful day.
