Cadillac Breakfast

I love weekends for so many reasons.  One of them is the amount of time allotted to eating breakfast or brunch.  This morning, I woke up starving.  I knew I couldn't make breakfast quickly enough so decided on a smoothie to hold me over.  Of course, Mr. G commented that there's a clear difference between the quality of his blender and mine.

We decided on a simple breakfast of eggs, hash browns and sausages while watching Cadillac Records.  Mr. G makes the most fluffy and exquisite eggs I've ever had.  However, this morning due to an unfortunate distraction, they were a little burnt.  You can barely tell from the pictures though!

Hash Browns

6 small - medium red potatoes
1/4 red pepper
1/2 small onion
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp chili powder
pinch of crushed red pepper
2 tbs olive oil

Peel the potatoes and cut them into bite size pieces.  Boil them with salt until soft but not mushy.  Heat olive oil in a skillet and pour in peppers and onions add black pepper.  When the peppers are a little soft, add pour in boiled potatoes and mix together.  Add chili powder and red pepper then turn to low heat and let it simmer for 5 - 7 minutes.

  1. Ms. T. First of all I'm bit shocked that YOU have a blog now! How far you've come from Rice-Krispie treats stored in your closet. That's all I have for now but I'm sure I'll have more to comment on later on in the exam cycle =)
