The Last Meal


After a lovely day strolling around the city, Mr. G and I decided we should make use of our fabulous SF kitchen and take it easy before our flight.  We stopped by whole foods and picked up some groceries.

Since we were unsure about which seasonings our apartment contained, we decided it would be safest to buy preseasoned products.  I know I know! Very unlike me, but it was the best decision.  We bought tequila lime shrimp skewers, almond crusted sole fillets, spinach, mushrooms, garlic and onion. 

The shrimp and fish was easy.  Set it in a small frying pan, cook for a few minutes on each side and voila there’s your meal.

The spinach on the other hand required a little bit of work.  Below is the recipe for the spinach.  Try it out, it’s super easy to make and tasted fantastic.

Garlic Spinach with Mushrooms
1 fresh spinach bunch, washed with roots removed
6 medium sized white mushrooms, sliced
1 clove of garlic, chopped
1/4 cup white onion sliced then cut in half
1/4 cup olive oil
salt, black pepper, crushed red pepper to taste

In a deep pot, heat 1/8 cup of olive oil.  Add onions and garlic, saute until onions are tender.  Once onions are tender, add mushrooms.  Cook for about 5 - 7 minutes stirring often until mushrooms are tender. 

Add salt and peppers.  In a small frying pan, heat remaining oil. Add spinach leaves to the big pot, pour heated oil on top and cover pot for 3-5 minutes.  Leaves should be wilting but not browning.  Keep stirring until spinach is a deep green color.  

Put it all together and this is what you get...
